Soak the clams you bought back in sea salt for three to four hours, then rinse them, put them in a cooking pot, add water, no more than the clams, add onions, ginger, garlic, chili peppers, and cooking wine in order, and cook until the water boils.

Rinse the cooked clams again and prepare for stir-frying.

Add oil, wait until the oil is ready, add chopped green onion, ginger and garlic, then add clams, a small amount of cooking wine, stir-fry for about ten minutes. For a better look, you can add some dark soy sauce and stir-fry a few times. Because the clams have already been cooked, you don't need to fry them for a long time, just to infuse the flavor.
