Peel off the shell and core of the longan, and simply clean the dust on the surface of the red dates. Put the longan meat and red dates into the pot, add 1-2 bowls of water, cover and boil until it boils. After boiling, turn down the heat and wait for a few minutes. After the longan and red dates water in the pot changes color, add brown sugar.

Crack a whole egg into the pot, cook over medium-low heat for 1-2 minutes until it is set, and then take it out (to prevent it from sticking to the bottom, gently lift the egg with a spoon, but not too much to prevent it from breaking). I prefer the taste of soft-boiled eggs, so I control the time to about 1 minute. If you like your eggs a little more cooked, you can extend the time appropriately.
