Wash the eggplant and divide it into 2-3 sections, steam it in a steamer (if a chopstick can be easily inserted through the eggplant, it means the eggplant is ripe), take it out and cool it.

Cut green onions into diagonal slices, flatten and chop garlic.

Tear the cool eggplant into strips.
