Tear off the skin of the small sole fish, remove the gills, wash and drain.

Add appropriate amount of salt, shredded onion and ginger, and marinate for twenty minutes.

Make a batter: flour, add a little salt and pepper, water and mix thoroughly.

Put the marinated fish in and coat evenly with the batter.

Heat a little oil in a pan.

Add fish and fry over medium heat.

Don't move it yet, wait until it's slightly set, then shake it gently until the surface turns golden brown.

Fry until golden brown on both sides.

Plate and serve.
