Fresh eggs.

Beat into a bowl and mix with a manual omelette.

Beat in a clockwise direction for about thirty seconds, add a little salt, and continue to mix.

Add cold water (the ratio is 1:15: 1:1 egg liquid, 1:5 water), mix well and use a spoon to skim off the bubbles on the surface.

Boil water in a pot beforehand and put in a shallow dish.

Carefully pour in the egg mixture.

Cover and steam over high heat for three minutes, then turn off the heat.

After a minute, open the lid and quickly add the green onions to cover.

Take it out carefully and drizzle with sesame oil and light soy sauce.
