Cut the tofu into mahjong-sized pieces and soak in boiling water for about 10 minutes. Remove and drain.

Mince the beef. Cut the green onions into sections, flatten the garlic sprouts and cut them into small sections.

Pour oil into the pan and fry the tofu.

Fry until both sides are slightly brown and set aside.

Heat the pan with cold oil, add the beef cubes and stir-fry until it changes colour.

Add onion, ginger and garlic slices and continue to stir-fry until fragrant.

Add cooking wine, light soy sauce, oyster sauce, and soy sauce and stir-fry.

Pour in 1 cup of water and bring to a boil. (Better with stock)

Add the fried tofu and simmer for about 5 or 6 minutes.

When the soup thickens, add a little salt, sugar, and finally the garlic sprouts.

Fry the garlic until fragrant and turn off the heat.

Remove from pan and plate.
