Overview

I didn't eat eggplant before college. It can be attributed to my childhood psychological shadow. My dad never eats eggplant, so our family basically doesn't cook eggplant. I didn't know about eggplant before kindergarten. The first eggplant I ate came from the hands of the aunt who cooked in the kindergarten. However, the popular trend in kindergarten at that time was that good children were the first to eat out, and it was shameful to waste food. The kindergarten teacher forced me to eat all the eggplants. Since then, I have not touched eggplants for 16 years (it seems that the shadow of childhood can really have a great impact on a person). I ate eggplant after college because a roommate in college described how delicious eggplant was to me and wondered why I didn’t eat eggplant. At that time, our school had three canteens that competed with each other. There was a dish called eggplant with egg yolk in the snack square, which was super delicious. So I started eating eggplant every day, as if I wanted to make up for the eggplant I hadn’t eaten in 16 years. The key point of this cold eggplant dish is the preparation of garlic oil. Pour hot oil on top of the garlic, and the aroma of garlic will hit your face. When it is served, it looks like a stir-fry, but it is actually a real cold dish. It is very simple to make and tastes delicious. It is my mother and I's favorite. (My dad still doesn’t eat eggplant. He says he is allergic to eggplant. In fact, I have always wondered whether he has a worse psychological shadow than me, XD)

Steps

  1. Put water under the steamer, put the eggplant on it and steam it for about 10 minutes. Use chopsticks to prick it lightly
