Separate the egg whites and yolks, and ensure that the basin containing the egg whites is oil-free and water-free.

Beat the egg whites until they become wet peaks and can form a curved peak.

Mix powdered sugar, jam, milk and egg yolks and beat evenly.

Sift in an appropriate amount of flour, not too much, and the batter should be semi-thick like the picture below.

Pour one-third of the beaten egg white into the egg yolk paste, and be sure to stir evenly to prevent defoaming. Pour the mixture into the remaining egg whites and mix carefully to combine.

Turn the pan to the lowest heat, use a small spoon to scoop up the mixed batter, put it into the pan, and naturally form small round cakes.

After about two minutes, bubbles will appear on the pancake. Do not turn it over before then.

Turn over quickly, turn off the heat and serve after 30 seconds.

When it comes out of the pan, it will be a beautiful brown color with one side burnt and the other side.
