Pork Ribs, Seafood and Tofu Soup
Overview

Soak the kelp in advance. It is best to buy thicker fresh kelp. I have dried kelp shreds at home, so I didn’t buy them.

Soak the pork ribs in water for 30 minutes and change the water several times to completely remove the blood

Pork ribs under cold water, add cooking wine and ginger powder (or ginger) and green onions

Bring to a boil and remove the foam. Take it out, rinse it with warm water and set aside. (Do not rinse directly with cold water to avoid sudden contraction of the protein and affect the taste)

Prepare other ingredients

Add enough hot water to the casserole at once, add the ribs, cook for about 20 minutes, add green onions

Add kelp, about 15 minutes later

Add cabbage and tofu

Continue to simmer the soup for about 15 minutes, add pepper and salt
