Overview

I only used light soy sauce and a little sugar for this ground three delicacies. I don’t add a lot of seasoning when I eat it at home.

  1. A potato, an eggplant, a green chili...this is the raw material.

  2. Cut the potatoes into hob cubes, cut the eggplant into hob cubes, and cut the green pepper into hob cubes.

  3. Chop green onions, garlic and ginger and set aside.

  4. Put more oil in the wok, heat it until it feels smokey, then add the potatoes and fry until golden brown, remove and set aside.

  8. Leave some oil in the pot, add onion, ginger and garlic and fry until fragrant

  9. Add water and fried potatoes, not too much water.

  10. Add a tablespoon of light soy sauce.

  11. A small spoonful of sugar.

  13. Reduce the juice over high heat and add green pepper slices. Stir well and serve.
