This is my first time making hairtail. I watched my mom cook it before, so I learned a little bit about how to season it. Although it was my first time, I couldn’t believe the taste. Maybe I was born to cook. Haha!

Prepare all the raw materials, no seasonings. The hairtail fish has been rubbed with salt beforehand and marinated for several hours.

Start putting the oil in the pan, still the same as before. When the pan is hot, pour the oil and add the old ginger.

When you smell the ginger, add the hairtail and stir-fry

Start seasoning when the frying is almost done. It is best to use rock sugar instead of white sugar, so that the cooked juice will be more sticky and the hairtail fish will be more flavorful.

Pour the vinegar when it is almost ready, because the vinegar will evaporate when exposed to heat for a long time, and there will be no vinegar aroma anymore.
