Steps

  1. Prepare ingredients.

  2. Pour flour and water into the basin; the grain bread premix I use has salt, dry yeast and many grains already added; so there is no need to add other ingredients, just an appropriate amount of water.

  3. First stir the bread flour and water evenly with chopsticks.

  4. Sprinkle a little dry flour on the cutting board, take out the dough, and knead it with your hands until smooth. It will take a few minutes.

  5. Put the dough back into the basin, cover it with plastic wrap, and let it ferment naturally at room temperature; if it's cold, you can ferment it in the oven.

  6. Let the dough rise until it doubles in size. Dip your fingers in flour and poke a hole in the top. Make sure the dough does not collapse or shrink.

  7. Take out the dough, press it gently to deflate the dough, and cut it into 8 equal parts with a knife without kneading.

  8. Then roll each small piece of dough into a ball, cover with plastic wrap and rest for 10 minutes.

  9. Then knead each small piece of dough into a round shape again. This step is equivalent to shaping the dough; cover with film and let rise again for 20 minutes.

  10. Take out the waffle maker and brush a little cooking oil on the upper and lower sides; then turn on the power and preheat for 1 minute; when using the mold for the first time, grease it for maintenance and facilitate removal of the mold, or you don't need to grease it.

  11. Place a small portion of dough in the center of the waffle plate.

  12. Then cover the lid, heat up and down, and bake for about 3 to 5 minutes. 3 minutes will make it softer, and 5 minutes will make it crispier. It depends on the taste of each person.

  13. Bake until golden brown. Use chopsticks to pick up one side and you can easily remove it from the mold. If you can't pick it out, it means the heating time is not enough. Just cover it and heat it for a while.

  14. Some of them will even stick to the lid, which is normal.
