The smaller the potatoes, the better. Wash them and cook them. They can usually be cooked in ten minutes. Prick them with chopsticks. If they are easy to pierce, they are done.

Cool and peel.

When the oil pan is hot at level 6, fry the small potatoes until golden brown and wrinkled skin, then remove from the pan and set aside.

Add a little oil to the wok and sauté the black pepper until fragrant. Pour in the small potatoes, stir-fry quickly, add salt, chicken essence, pepper rings, turn off the heat and sprinkle with chives.

Take it out of the pan and plate it up.
