Cut the eggplant into cubes, add salt, mix well and drain

Shred carrots and green peppers and set aside

Chop the garlic and set aside

Heat oil in hot pan and sauté eggplant

Prepare the sauce, dark soy sauce, cooking wine, white sugar and a little chicken essence

Drain the eggplant. If there is excess oil, you can save it for other dishes
