Wash the pig's trotters and put them in a pot to boil. Do not cover the pot when pouring water to remove the fishy smell.

After soaking, wash the pig's trotters with cold water.

Heat 50% of the oil, add sugar and simmer over low heat.

After the sugar is boiled, add the pig's trotters and stir-fry until it turns colour.

Add the light soy sauce and dark soy sauce cooking wine and stir-fry until it changes color.

Add water and add the prepared ginger, garlic, star anise, bay leaves and cinnamon.

Bring to a boil over high heat, turn to medium heat, cover the pot and simmer.

Simmer over low heat for 40 to 50 minutes and then reduce the juice over high heat
