I haven’t made this soup for a long time. This kind of local soybeans is only available in my hometown. This time when I went back to my hometown during the Mid-Autumn Festival, my mother-in-law bought this kind of soybeans. Really delicious. It smells so good. In Guangzhou they are all genetically modified soybeans. Therefore, no one buys soybeans. When I was a child, I didn't like eating bitter melons that were too bitter. My mother used this method of salting them to remove the bitterness. When I grew up, I still wasn't used to eating bitter melons.

  1. Blanch the pork bones, wash them and put them in a casserole with boiling water.

  4. After boiling, remove the floating residue from the top. Turn to medium-low heat, cover and simmer for 40 minutes.

  5. Wash the bitter melon, remove the seeds and cut into long cubes. Sprinkle in some salt. Stir well and marinate for a while.

  6. As soon as the bitter water comes out, pour it out and rinse it with clean water.

  7. Add bitter melon.

  8. Bring to a boil over high heat, then reduce to medium to low heat and continue to simmer for more than half an hour until the bitter melon is cooked and soft.
