Wash the duck and cut it into pieces. Saute in a white pot until fragrant instead of boiling water. Pour out the water, rinse and drain. Set aside.

Wash the perilla, ginger, garlic and green onions and cut into pieces and set aside.

Heat oil in a pan, add ginger slices and garlic until fragrant, add duck and stir-fry, add oyster sauce, fermented bean curd, light soy sauce, cooking wine, a little sugar, stir-fry evenly, add pasta water, bring to a boil over high heat, then simmer over low heat for 15 minutes.

After 15 minutes, add the perilla and turn to high heat to reduce the juice.

Add the green onions, turn off the heat and prepare to serve.
