Steps
-
Prepare the ingredients: Cut off the cowpeas and wash them; cut the lean meat into small slices and marinate it with salt and soy sauce for about 5 minutes; cut the pickled sour chili into small pieces, and prepare the ginger, garlic, and Sichuan peppercorns.
-
Add a little oil, heat it up, add the ingredients and stir-fry until fragrant.
-
Add the marinated lean meat and stir-fry over high heat.
-
Remove the fried meat from the pot and set aside. If the meat is fried for too long, it will become too old. Add the cowpeas to the pot and stir-fry.
-
Add an appropriate amount of salt and chili sauce, stir-fry thoroughly, add an appropriate amount of water (about one-third of the cowpeas), and simmer for a while.
-
When the cowpeas are fully cooked and the water is almost dried out, add the lean meat that was originally fried, stir-fry for a while, and take off the pot.

It’s out of the pan and it’s time to eat!
