Cut the fish crosswise and marinate it with salt for 20 minutes to enhance the flavor

Turn on low heat and wipe the pan with ginger slices. Repeat several times for better results (anti-stick pan)

Wash the fish and drain it. Add peanut oil, when the edges of the oil are smoking, add the fish and fry slowly over low heat

Do not turn the fish over during the frying process. Move the pan so that the oil in the pan covers all sides of the fish. After five or six minutes, turn over and fry the other side of the fish (be sure to use low heat)

Fry until both sides are golden brown, control the oil and remove

Mince ginger, onion, garlic and chili

If you like it spicy, you can add more chili pepper

Add the seasoning powder to the remaining oil from frying the fish and stir-fry until fragrant. If there is too much oil, pour out some! Then add an appropriate amount of light soy sauce (low heat, too much garlic will make the minced garlic black and ugly)

After frying, pour the sauce onto the fried fish and sprinkle with chopped green onions! Crispy skin and tender inside, your mouth is watering!
