Blueberry jam bagel for eye protection

First mix warm water with blueberry jam.

Add 300G high-gluten flour, 4G salt, 4G sugar, 20G baking powder 3G and knead into a smooth dough, then add dried blueberries.

Knead evenly again and leave it for 30 minutes for the first fermentation.

After the first fermentation is completed, divide into 6 equal portions, roll into balls and let stand for 15 minutes.

Take a piece of dough, press it into a round shape and fold it in three as shown.

Fold it again and pinch it tightly.

Knead it into a strip with a length of 20CM. Flatten one end.

Pinch the ends together tightly. After all 6 pieces are done, place them at 35 degrees for 30 minutes for final fermentation.

After the final fermentation is completed, prepare a pot of water, add 20G of sugar, and bring it to the temperature before boiling. Place the bagel in and cook for 30 seconds on one side, and cook on both sides for a total of 1 minute.

Preheat the oven to 200 degrees in advance, put the cooked bagels in and bake for 20 minutes. Delicious blueberry bagels are out of the oven!
