Wash the chicken feet and set aside. Star anise, used for blanching ginger slices.

Chop off the nails from the chicken feet and make a slit in the middle of the chicken feet without cutting.

Add water to the pressure cooker to cover the surface of the chicken feet, add star anise and ginger slices and blanch them. In about 5-10 minutes, the surface of the chicken feet will turn white.

Wash the chicken feet again, add an appropriate amount of water (to cover the surface of the chicken feet), salt and cooking wine and bring to a boil over high heat. (When the pressure cooker squeaks, cook over high heat for another 5 minutes.) Turn to medium heat and cook for 30 minutes.

If you find there is too much soup, pour it out.
