Autumn Melon Vegetable Cake
Overview
Autumn melon is called differently in different places. Some of them are mouse melon, hand melon, water melon, pillow claw 😂 and loofah. It tastes very similar to loofah when cooked. I like its sweet and fresh taste. It is smooth and goes well with rice. It can be cooked in soup or stir-fried and stir-fried with seafood to make it even more delicious. 😋😋😋

Ingredients
Steps
-
Peel and wash the melon
-
Cut into small thick strips, similar to cutting French fries (cut into round slices first and then into shreds)
-
Cut it into a container and add a pinch of salt
-
Mix well so that the melon will release water, making it easier to add powder later
-
Add 2 handfuls of potato starch and mix well (I grabbed it with my bare hands)
-
If you want the cake to be soft and a little crunchy, add 1⃣️ of fried flour. If not, add 1⃣️ of potato starch and mix well.
-
After mixing well, it will look like this. The melon juice has been absorbed by the potato starch, so there is no need to add water
-
Put an appropriate amount of oil in the pan. I put less oil in the non-stick pan
-
After the oil in the pan is hot, sprinkle the melon shreds on top. You don’t have to fill up the empty space, just sprinkle as much as you like
-
Cover the pot and bring to a simmer
-
At this time, beat some egg liquid, you can use it in 2⃣️ times
-
After 1 minute or 2 minutes, open the lid, add half of the egg liquid, and shake evenly
-
After the egg liquid has solidified, cover and cook on the other side
-
I like pink ones
-
It’s soft, waxy and a little crispy. It tastes better when fried with seafood
