Peel potatoes and cut into cubes.

Cut the kelp into long pieces. It is best to use the thicker part of the kelp for stew.

Cut pork into cubes.

Pour oil into the pot and sauté the aniseed and ginger slices until fragrant.

Add pork and stir-fry with appropriate amount of dark soy sauce.
