Chinese Cranberry Toast
Overview
When I start learning new bread, the first thing that comes to my mind when talking about bread is simple toast. This small toast is added with dried cranberries, which has a sweet and sour taste. It can be eaten with jam like white toast, or it can be eaten alone, and the taste is not bad! The small toast mold I used is about 200g and I made 2 servings. If it is a large toast mold, these quantities will make one serving! In addition, this toast uses Chinese fermentation, so the toast is softer and tastes better.

First prepare medium-sized dough ingredients, 100g high flour, 3g white sugar, 1g yeast, and appropriate amount of water.

Mix the ingredients, stir evenly, and knead into a smooth dough. Adjust the amount of water according to the different water absorption of the flour. I used 60g here.

If the weather is warmer, ferment at room temperature until 3-4 times in size.

Add all the ingredients for the main dough except flour and butter into the basin and mix evenly.

Tear the fermented Chinese dough into small pieces and put them into a basin.

Mix high-gluten flour and low-gluten flour and sift into a basin! Stir until there is no dry powder, move to a silicone mat and start kneading.

When you start kneading the dough, it will feel sticky, so don't put anything in it and continue kneading.

Gradually it will no longer stick to your hands, and you can knead it until you can pull out a large piece of film, but it is easy to break.

At this time, add the softened butter and continue kneading. If it becomes sticky again, don't be afraid, continue kneading and combine it with beating.

.Knead the dough until the surface is smooth and expanded, then pull off a small piece of dough and you can easily pull out the thin glove film without breaking it.

Soak the cranberries in warm water, drain them, then cut them into small pieces and set aside.

Now let’s divide the dough. Mine is made from a small toast mold into 2 portions, which is 6 pieces of dough. If it is a large toast mold, just divide it into 3 equal parts. Cover with plastic wrap and let rise for 20 minutes.

Take a small piece of dough and roll it out as shown in the picture.

Sprinkle cranberries evenly over dough sheet.

Roll up the dough from one end and place it into the toast mold.

Make them all in sequence and put them in the mold, as shown in the picture!

Cover with plastic wrap and ferment twice until doubled in size. At this point, the dough is about 8-9 minutes full of the mold.

Preheat the oven to 150 degrees for 5 minutes, then place the toast mold in and bake for 20-25 minutes. Immediately after taking out of the oven, remove from the mold and let cool.

Take a look at the three pieces of dough and see that they are fine.

Then slice it to reveal the sweet and sour cranberries.
