Wash 3 long purple eggplants and remove the stems (green long eggplants are also acceptable)

Cut a cross from the top of the eggplant and tear it into long strips with your hands

Add oil to wok. When it's hot, add garlic slices and eggplant strips, cover and simmer over low heat until one side softens, turn over, and then slowly fry the other side

Add half a bowl of sauce into a small bowl, add a little water and mix well

Fry the eggplant until golden brown and soft

Add the prepared sauce, mix well, bring to a boil and reduce to a simmer

Add minced onion, minced garlic and minced green pepper (more minced garlic), mix well, simmer over low heat for a while, be careful to stir during the process to avoid burning, add MSG to season and serve!
