Remove the scales from the hairtail, wash and cut into pieces, marinate with salt, pepper and cooking wine for ten minutes.

Flour and starch 2:1, add one egg, stir into batter, heat the oil pan to about 60%, add the batter to the hairtail segments and fry in the oil pan

Fry until golden brown

The batter keeps the fish tender.
