Chop the rabbit meat into small pieces and soak in cold water for about half an hour to remove the blood.

Chop the scallions into finely chopped green onions, shred the ginger, and stir-fry them together with Sichuan peppercorns and rock sugar. Set aside.

Put the green onion slices, ginger slices and star anise together and set aside.

Put rabbit meat in a pot with cold water, bring to a boil over high heat, blanch in hot water and take it out.

After washing with warm water, add cooking wine, dark soy sauce, soy sauce and sugar to marinate.

Heat the oil in the pot, add the onion, ginger, and pepper and stir-fry until fragrant, then add the rock sugar and dissolve.

Add the rabbit meat and stir-fry, and pour the marinating sauce directly into it. Add appropriate amount of dark soy sauce, soy sauce and sugar and stir-fry evenly.

Add water to cover the meat, add green onion slices, ginger slices and star anise, bring to a boil over high heat, then simmer over low heat for 30-40 minutes, then reduce the soup over high heat. If it feels bland, add an appropriate amount of salt to adjust.
