Tiger Skin Spinach Burrito
Overview
They say you should have a good breakfast, but you always want to sleep a little longer and don't want to get up early in the morning and be busy with work. This cake is both delicious and nutritious. I prepared the chopped spinach and other ingredients last night, and the work was done in 20 minutes this morning. Paired with the fragrant peanut pulp porridge, a perfect breakfast is ready.

Wash and blanch the spinach and chop into fine pieces.

Soak the dried shrimps in warm water for 5 minutes, remove and chop into small pieces.

Add the chopped spinach and dried shrimps into appropriate amount of flour.

Add a little salt and pepper and add some water to make a thin paste.

Pour a little oil into the pan and make a thin layer. Pour in the batter and rotate the pan to spread the batter into a thin and even pancake. Fry the cake over low heat until cooked, take out and set aside.

Beat two eggs.

Heat the pan without adding oil. Pour in the egg liquid and shake the pan to form an even egg crust.

Place the egg skin on the chopping board, top with spinach pancakes, and top with tomato sauce or salad dressing.
