Hunan specialty - bone soup noodles

There are many rice noodle shops in Beijing, but I haven’t found one that’s really delicious yet, so I’d better make it myself. Soup noodles are a traditional and authentic breakfast in Hunan. There will be a large soup pot at the entrance of every rice noodle shop, which contains a soup base made with many large stick bones and spices. After blanching the rice noodles, add various toppings, top with bone broth, and add a standard ingredient - fried dough sticks, your appetite will be satisfied in the morning. The rice noodles sent from Hunan are traditionally handmade, and now Taobao stores also sell farm-made rice noodles. But don’t dare to buy it in supermarkets and general markets, as they occasionally contain additives. In addition to soup noodles, the famous rice noodles include braised rice noodles and cold rice noodles.

First soak the rice noodles. Rice noodles are the same as noodles. They don't look like much, but once they are soaked, you will find that they are actually quite a lot. These are probably 4 or 5 pieces.

Soak in boiling hot water and cover the rice noodles. After the water cools down, change it to hot water. Can be repeated one more time. Gently pinch it with your hands, and the rice noodles are ready to soak.

To make bone soup base, you can use more soybeans.

Blanch the big stick bones. Add water to the pressure cooker as much as possible, put it into the pressure cooker together with soybeans, millet pepper, ginger slices, star anise and aniseed. Add a spoonful of rice wine, a little pepper, appropriate amount of salt and chicken essence.

Prepare some minced meat and minced garlic. These are the ingredients for making rice noodles, also called mazi. In addition to minced meat, you can also add a variety of ingredients you like.

Prepare chopped peppers, minced green onions and fried minced meat. If you don’t have chopped pepper, you can use chili powder or some sour pickles instead.
