Wash the spinach and set aside.

Break 2 eggs into the bowl.

Beat the eggs into egg liquid.

Heat oil in a pan.

Fry the eggs and set aside.

On the other side, add 2 slices of ginger and water to the soup pot and bring to a boil.

While the eggs are still hot, add them to the boiling water (this is the key to making the soup white).

Add spinach and salt to the slightly white soup.

Just cut off the spinach and it’s done! Done!
