Crispy Eggplant
Overview
I don’t know much about eggplants. What I usually like to eat is grilled and served cold. The weather was too hot a few days ago, so I made cold eggplants. During the weekend break, I thought it was time to eat eggplant in a different way. I remembered the crispy eggplant I made at home when I was a kid. Sometimes minced meat was added to the crispy eggplant at home. I don’t like minced meat, so I made a simple one and fried it with sesame oil. It was delicious!

Wash the eggplant and cut it into about one inch in size, then divide into three small slices, keeping them in half.

Beat two eggs in a small bowl, mix well, and sprinkle with appropriate amount of salt.

Add another tablespoon of flour.

Dip the entire eggplant into the batter, including the middle.

Stick evenly.

Heat sesame oil in a pan, add eggplant and fry until golden brown.
