Colorful potato shreds
Overview
I forgot to buy groceries at work on Saturday, so I went through the refrigerator and found a potato, half a carrot, half a lettuce, and a small piece of kohlrabi. It was not enough for any dish, so I had to fry them all together and fry a few poached eggs for dinner. This plate of shredded potatoes has rose kohlrabi in it, so it is salty and delicious and goes very well with rice. What's the name for this stir-fried dish? Potatoes and vegetables? The color is quite nice, so let’s call it colorful potato shreds.

Peel and wash the potatoes and cut into shreds.

Wash the shredded potatoes in water to remove the starch.

Peel carrots and lettuce and cut into shreds.

Wash the rose kohlrabi and cut it into shreds. Cut the green onion into sections and set aside.

Heat the wok, pour in cooking oil to heat, add the green onions and stir-fry until fragrant.

Add shredded potatoes, carrots, lettuce, and kohlrabi and stir-fry until cooked.

Pour in a spoonful of cooking wine and stir-fry.

Add a small amount of salt and chicken essence and stir-fry evenly.
