Prepare the ingredients: 250g cocoa liquor, 100g cocoa butter, 100g glucose, 50g whipping cream, 10g cocoa powder, 5g soy lecithin, and 5ml rum.

Mix 250g of cocoa liquor and 100g of cocoa butter into a water-free and oil-free container. Dissolve in hot water of 75 degrees Celsius, stirring constantly while using water.

Cool the chocolate paste to 35.8 degrees

After everything is dissolved, add 10g of sifted cocoa powder and 5ml of rum and stir evenly. At this time, the chocolate temperature is around 27 degrees.

Heat the chocolate paste over water to about 40 degrees.

Put 50g of light cream and 100g of glucose into a milk pot and cook over low heat until all the glucose melts. Slowly pour the cooked liquid into the chocolate, stirring constantly until everything is evenly mixed.

Sift in soy lecithin and stir evenly.

When the temperature of the chocolate paste reaches about 30 degrees, it can be put into the mold and refrigerated to set.
