Braised sea cucumber with black pork (roasted sea cucumber with green onions)
Overview
I added black pork. If I didn't add meat, it would be the traditional sea cucumber roasted with green onions. I used wild dried sea cucumbers sent from abroad by my friends. Soaking dried sea cucumbers: 1. Soak in pure water and refrigerate in the refrigerator for two days, changing the water every day. 2. On the third day, take it out and put it into the pressure cooker, turn on the steam and press it for 10 to 15 minutes. After cooling, take it out and continue to refrigerate it for 2 to 3 days. Change the water every day. The most important thing for soaking dried sea cucumbers is that the entire process container must be salt-free, oil-free, alkali-free, and use pure water.

Prepare soaked sea cucumber and cut into strips diagonally. After soaking, it is already 20cm. .

After the water boils, add cooking wine and blanch the sea cucumber for one minute.

Green onions, white and cut into sections, cut with a knife on the surface. Cut the green onion leaves into sections.

Cut the black pork into thin slices, leaving the fat in the frying oil to add flavor to the green onions. Marinate the black pork with cooking wine, light soy sauce and cornstarch and set aside.

Cornstarch, add cold water, water starch and set aside.

Use some scallions and sauté until fragrant.

Add black pork and stir-fry until cooked.

In another pot, use lard and fat to fry the fat.

Add green onions and ginger slices and fry over low heat until fragrant.

Fry the scallions in oil until the white sides of the scallions turn yellow and become fragrant.

Select the white scallions, pour out the scallion oil, and keep the remaining ingredients in the pot.

Add 250ml water and make onion soup. If you have soup stock, you can skip this step.

Boil for 5 minutes, pour out the onion soup, and discard the remaining ingredients.

Take another pot, add scallion oil, add sugar, and stir-fry until slightly brown.

After the sugar turns slightly yellow, add soy sauce, cooking wine, and green onion soup and bring to a boil.

After the soup boils, add sea cucumber and cook for 4 to 5 minutes.

After cooking for 2 minutes, add the fried scallions and continue cooking.

Pour in the fried pork for about 4 minutes and stir-fry to reduce the juice. Add chicken essence, sugar and soy sauce to taste.

Finally, pour in the water starch coating sauce and take it out of the pot.
