Peel and grate potatoes, soak in water to remove excess starch, drain and set aside.

Wash the red pepper, remove the stems and seeds, cut into shreds and set aside.

Heat a pot, add an appropriate amount of oil, add shredded red peppers and stir-fry until fragrant, then add shredded potatoes and add a little salt to taste, stir-fry for a few times over high heat.

Remove from pan and plate.
