Whole wheat steamed buns/baozi
Overview
The making of whole wheat bran steamed buns and steamed buns is mainly based on the fermentation method of whole wheat flour, and is also suitable for ordinary flour

Steps
-
120g whole wheat flour, 60g warm water (warm water is mainly used to dissolve the yeast powder, you can use cold water for making the dough, but the dough I made is relatively small, so I just used warm water to save trouble), 1.2g yeast powder. After the yeast powder is dissolved in warm water, slowly pour the warm water containing yeast into the flour bowl and mix until the dough is smooth
-
Cover with plastic wrap or a lid and let the dough ferment (1.5-2 hours is enough if the weather is about 25 degrees Celsius in a natural state). The dough ferments until it doubles its original size. If the surface has a honeycomb shape and it does not bounce up when pressed, it means the fermentation is successful
-
Take out the fermented dough, add a little dry flour, and knead it for about 5-10 minutes to deflate the dough (depending on the size of the dough, the amount I knead for 3-5 minutes is enough). Divide the kneaded dough into several equal portions. The bun maker will roll out the bun wrappers and then fill them with fillings. For making steamed buns, knead them directly into the shape of steamed buns.
-
Both buns and steamed buns should be left to rest for another 10-15 minutes for the second fermentation. You can place it directly in the steamer and let it rest. When the buns and steamed buns become 1.5-2 times the size, they can be steamed. I usually add cold water directly to the steamer, put the secondary fermented steamed buns in, steam them over high heat for 20-22 minutes, and then simmer for 2-3 minutes. It was successful

This time I followed the trend and bought whole wheat flour with wheat bran from an Internet celebrity. Facts have proved that you should never follow the trend 😓 Not to mention the price, apart from the fact that whole wheat flour contains wheat bran and tastes more like whole grains, it has no wheat flavor at all. The whole wheat flour I bought from another store is better. The steamed buns have a strong aroma of wheat. It’s the kind of flavor I ate at my relatives’ house in the countryside when I was a child. It’s a flavor I’ve always missed~

It looks good when taking pictures, I am attracted by the wheat bran, but there is no wheat aroma at all. Remind everyone not to follow the trend when buying things😂
