Snow Lotus Seed Chicken Soup
Overview
When my aunt came to visit, she ate a better soup. It had a gelatinous texture with snow lotus seeds added, and it was very delicious. This is stewed in a stew pot over water, and the soup is particularly delicious.

Snow lotus seeds should be soaked in advance, at least 12 hours. Wash red dates and white jade mushrooms. Peel and slice the ginger. Also a few wolfberries and a cardamom.

Cut the chicken legs into pieces and put them in a pot under cold water, add ginger slices and cooking wine and blanch them until ready.

After all the preparations are done, start loading the ingredients into the stew pot. Place white jade mushrooms on the bottom, then put snow lotus seeds, a piece of ginger, then blanched chicken pieces, another piece and cardamom, red dates and wolfberry sprinkled on top. Add some salt and then add boiling water.

Cover the stew pot, put it into the rice cooker and simmer for 1 hour.
