Sweet Potato Pancake
Overview
This looks a bit like pumpkin pie. It tastes average when you eat the first piece, but the more you eat it, the more flavorful it becomes.

Steps
-
First mix the flour and baking powder together, then prepare water, dissolve the sugar into the water, and stir the sugar water and flour evenly.
-
Don't add too much water at the beginning, add it slowly, otherwise the dough will be too soft later. After everything is mixed evenly, the dough will feel a little sticky to your hands. After 20 minutes, knead the dough again. The dough will be very flexible and will not stick to your hands.
-
Since it was my first time making it, I just used a little flour to test it out.
-
Peel and cut the sweet potatoes into small pieces and put them in the microwave for 3 minutes, then press them into a puree while still hot.
-
It’s best to press until there are no sweet potato pieces left, then mix it with the dough just now, knead the sweet potato puree into the dough, knead until it feels even, and finally shape it into the shape you want.
-
Place on the steamer, steam over high heat, then turn to low heat and steam for 20 minutes.

It's done. Although it doesn't look particularly good, I'm still very happy. After all, it's the fruit of my own labor. It's better to eat it cool than hot. Friends who are not afraid of greasiness can dip it in flour and deep-fry it, which is similar to the pumpkin pie we buy outside!
