Lucky Flower Qingtuan (Qingming Daddy)
Overview
It rains heavily during the Qingming Festival. In spring, does it need some fresh green breath? Qingming grass is the main material for making green dumplings. Qingming grass is actually mouse mugwort. Because I hate mice, I prefer another name for mouse mugwort, Qingming grass. This time I used two kinds of grass, Qingming grass and common mugwort! The green dumplings produced have a faint fragrance of grass and faint wild chrysanthemums. It has the earthy smell of spring. It is soft and fresh and sweet. Try one and it will definitely melt your heart!

Pick the Qingming grass, wash it, drain it and set aside

Pick the mugwort, wash it, drain and set aside

Sprinkle baking soda powder on the drained Qingming grass and mugwort and mix well (baking soda can keep the color of the green dough green after it is steamed)

Mix the Qingming grass and mugwort mixed with baking soda powder (if you don’t have mugwort or Qingming grass, you can actually use only one of the grasses! You can actually use only Qingming grass or only mugwort!)

Use boiling water to scald the mixed grass until cooked (it only takes 5 minutes, you don’t need to blanch it for too long, don’t cover it when scalding, otherwise it will turn yellow)

Wash the blanched green glutinous rice balls in cold water, take them out, squeeze out the water, and chop them into small pieces

Put the chopped green grass into a blender and grind it until ready to use (if it feels dry, you can put a small amount of water in it, I used a fruit juicer to grind it),

The ratio of glutinous rice flour to sticky rice flour is 2:1. If you don’t have sticky rice flour, you can use clear noodles instead! I've tried both, and I don't think there's much difference

Boil the rice flour in boiling water until it becomes a dough (it can be a little drier, because the green dough grass contains grass juice, and the soup noodles can be a little drier when making green dough)

Mix glutinous rice flour, green dough grass pulp and cooked dough together, knead evenly into dough and set aside

Boil the sticky rice flour in boiling water until cooked (you can add more water to the sticky rice flour here, because the glutinous rice flour that is mixed later also needs water. Friends who are not sure about the amount of water can also add water when mixing the glutinous rice flour)

Mix the boiled sticky rice flour and glutinous rice flour and knead them into a dough and set aside (if you like other colors, you can add various colors! I made two colors this time, white and orange dyed with carrot juice)

Fry the black sesame seeds until cooked, grind them into pieces in a food processor, add butter (or lard, for flavor), honey, and white sugar, stir to form a dough and set aside (if you like sweetness, you can add honey and white sugar at will! As long as it can be kneaded into a ball and not sticky)

Take out all the basic materials prepared earlier and prepare a drop-shaped grinding tool and a leaf grinding tool (of course! The pattern is up to you)

Divide the black sesame filling, white bean paste filling, and green dough into small portions, roll into small balls and set aside (those with slow hands can cover the dough with a plastic wrap to prevent it from drying out)

Roll the green dough into thin sheets, wrap with filling, seal, and knead into smooth balls

Roll out the white dough thinly and cut out small leaves with a grinder

Place three small leaves on the stuffed green dough. Press a little green dough between the three leaves and press it with the palm of your hand to make the leaves and green dough stick together (a green dough with white leaves is now complete)

Roll out the white dough thinly, and use a drop-shaped grinder to cut out the four petals of the four-leaf flower

Place four leaves on the green dough, put a little green dough or orange dough on the center of the four petals, and press it with the palm of your hand to make the petals stick to the green dough (the lucky flower simply blooms on the green dough)

Pour cold water into the pot. After the water boils, turn down the heat and steam for 10 minutes. (If the dough is large, you can steam it for a longer time. Mine is about 3 cm in diameter. Steam it for 10 minutes and it will be just cooked.)
