Curry Omelette Rice
Overview
When I am at home alone, I sometimes find cooking to be a troublesome task. When I was cooking at noon, I cooked a little more rice and saved it for making omelette rice at night. For lazy people, omelette rice can be used as both a dish and a meal, killing two birds with one stone.

Peel onions, wash and dice

Wash and dice mushrooms

Rinse the bacon with water and cut into small pieces

Beat the eggs with chopsticks, add a small spoonful of water starch, and beat well

Heat the oil pan, add diced mushrooms and onions, stir-fry evenly

Add the green beans and stir-fry a few times

Add bacon and stir-fry a few times

Crush the cold rice and put it into the pot. Add curry powder and salt and stir-fry evenly

Fry the rice until it is evenly coated with curry powder and the grains are distinct, and it is ready to serve

Heat another pan with oil, heat it over low heat, pour in the beaten egg liquid, rotate the pan so that the egg liquid evenly covers the bottom of the pan

After the egg liquid is cooked, turn off the heat and spread the fried curry rice on the egg skin

Cover the other half of the egg skin on the fried rice, use a spatula and chopsticks to gently remove the omelette rice from the pot and place it on a plate
