Cut off the heads of the prawns, remove the shells and devein the shrimp, leaving the small tails.

Cut in half from the back (do not cut).

Dip in cornstarch.

Dip both sides with starch and pound with a rolling pin.

All packed and ready for use.

Reserve the shrimp heads for frying in shrimp oil.

Pour in tomatoes, ginger and garlic.

Add water and cook all at once.

Remove the shrimp heads and tomatoes.

Add seaweed and season with salt and light soy sauce.

Add the shrimp crackers (will be cooked quickly)

Finally sprinkle with pepper and chopped green onion.
