Prepare onions, ginger, and chili peppers.

Clean the hairtail and chop into long pieces

Add cooking wine, ginger slices, and green onions and marinate for ten minutes.

Shred the ginger, and cut the green onion and pepper into sections.

After marinating, remove the ginger slices and green onions, then use a clean plate to dip the fish pieces into the cornstarch, making sure they are all evenly coated.

Pour an appropriate amount of oil into the pot and heat it over medium heat until the oil temperature comes up. Use chopsticks to place the hairtail into the pot and fry until it is about eight to nine times done.

Take out the fried hairtail and put it on a plate, leaving a little oil in the pot.

Add onions, ginger and chilies to the pot until fragrant.

Pour the hairtail into the pot and stir-fry several times, add light soy sauce, dark soy sauce, oyster sauce, sugar and vinegar.
