Clam Omelette
Overview
Clam omelette is a famous roadside snack in Taiwan. It is made by frying oysters with egg liquid, chopped green vegetables, and potato starch paste, and then served with sauce. It is sweet and sour, rich in nutrients, and is very popular.

After buying the oysters, soak them in salt water for 3 hours to drain out the sediment. Peel and wash.

Beat the eggs and set aside.

Wash and chop green vegetables and green onions.

Add water to sweet potato starch, add chopped green onion and mix well.

Add tomato sauce, oil, sugar and water and mix well.

Heat a wok, add a small amount of oil, pour in the sauce and stir-fry until it thickens, then turn off the heat.

Prepared sauce.

Turn on medium heat, heat the wok, add oil, add oysters and fry for 1 minute.

Add sweet potato pulp and continue frying until translucent.

Add egg liquid and continue frying for 1 minute.

Add chopped green vegetables, fry until formed, turn over and continue frying for 2 minutes, turn off the heat.

Place on plate.
