Braised Golden Pomfret with Pickled Vegetables
Overview
When I was a kid, my parents always added some tofu or pickles to cook the fish because of the constraints of conditions. Now eating it is a different experience, and it still tastes the same.

Prepare the ingredients.

Clean the pomfret, cut the back of the fish with a knife, fry it in a pan until it turns golden brown on both sides and serve it out.

Add onion and ginger and stir-fry until fragrant.

Add the pickles and stir-fry for ten seconds.

Add the fried pomfret, cooking wine, light soy sauce, dark soy sauce, and sugar.

Add water and bring to a boil.

Reduce heat to low and simmer for about 20 minutes.
