Tomato Longli Fish
Overview
I had never heard of Longli fish in the early years. In recent years, it has been sold in supermarkets all year round, and it is cheap. The meat is tender and thornless. It is sour and delicious when stewed with tomatoes.

Wash and slice the Longli fish and marinate with pepper.

Wash the tomatoes and cut into large pieces.

Shred the ginger, slice the garlic, and cut the green onion into sections.

Wash and cut the white jade mushrooms into sections.

Pour oil into the pot and sauté onion, ginger and garlic.

Pour in the tomato sauce.

Sauté until it turns red.

Add tomatoes and stir-fry.

Pour a large bowl of boiling water, add the white jade mushrooms, cover the pot and simmer for 2 minutes.

Add the marinated Longli fish and cook for 1 minute, sprinkle with salt and remove from the pot.

Smooth, tender and sour, it goes perfectly with rice.
