Spicy Chicken

Pour two large bowls of water into the pot and bring to a boil, pour in the marinated chicken pieces and cook for 3 minutes, drain and set aside.

Cold pot, pour cold oil into the pot, pour in peanuts and light fire, fry on medium heat for five minutes (you can hear a squeaking sound), drain the oil and set aside.

Using the hot oil in the pot, pour in the boiled chicken pieces.

Fry until golden brown and remove from the pan. Drain the oil and set aside. Pour the excess oil into a bowl (any excess oil can be used for cooking).

Add oil to another pan, heat to level 8, add Sichuan peppercorns and stir-fry until fragrant.

Pour in the dried chili segments and stir-fry until fragrant

Add the fried chicken and fry for five minutes. Add sugar and peanut butter.

Add appropriate amount of salt and chicken essence, stir-fry evenly, then turn off the heat, pour in sesame oil, stir-fry evenly and remove from the pan.

Sprinkle with white sesame seeds and serve
