Soak the ribs in water for half an hour to 1 hour until the blood soaks in

Blanch the pork ribs and drain and set aside

Put rock sugar, aged vinegar, light and dark soy sauce, and tomato paste into a bowl

Slice onions and ginger and set aside

Put a little oil in the pot, add star anise and stir-fry until fragrant

Turn to low heat and stir-fry pork ribs

Add onion and ginger and continue to stir-fry until the meat is slightly browned

Add water until the ribs are almost covered

Add the prepared sauce, bring to a boil over high heat, then simmer over low heat.

Cook until the sauce is thick, reduce the sauce over high heat, add salt, sprinkle in sesame seeds, and stir evenly.

Transfer to a plate and garnish with coriander.
