Fried Huajia
Overview
I really like to eat scallops. Stir-fried scallops is a dish I often make at home. I can usually eat a large plate of scallops by myself. Occasionally, I fry the scallops with shredded chili peppers. Sometimes I stir-fry them with chives. This time I used garlic sprouts and coriander to stir-fry them.

After the water boils, pour in the flower armor and blanch the flower armor. After a few minutes, all the flower armor will slowly open their shells

After the scallops are cooked, put them out of the pot and put them in a drain basin for washing vegetables. Place them under the faucet and rinse them. Shake the drain basin while washing. Repeat three times (this step is to wash away the sand and dirt in the scallops. When washing, you will find that you can see a lot of black dirt every time you rinse). Drain and set aside
