Beef stew with potatoes
Overview
When I was a child, my mother often made beef stew with potatoes, and the whole family loved it. Now I make this dish and the whole family still loves it.

Select fresh potatoes, peel and wash them

Cut the beef into pieces, blanch in boiling water and remove.

Peel potatoes and cut into chunks

Soak in clean water and set aside. Slice ginger and cut green onion into sections.

Heat the oil in the pot, add beef and stir-fry to remove the water

Add soup and seasonings

Bring to a boil over a high fire and skim off the foam

Turn to low heat and cook until it is 80% mashed, add potato cubes, and the potatoes are crispy and tender, then serve.
