Wash and cut the eggplant into hob pieces, sprinkle with some salt and marinate for 10 minutes. The purpose is to add flavor and absorb less oil when frying.

Squeeze out the water from the eggplants and coat them evenly with starch so as to absorb less oil when frying.

Cut the green peppers into rhombus-shaped slices and cut the potatoes into small hob-shaped pieces for easy frying.

When the oil temperature is about 60 to 70% hot, fry the potatoes. Fry until the potatoes are browned and crusty around the edges. If it's not familiar, you can prick it with a toothpick.

Fry the eggplant in the same oil temperature until soft and remove.

Set aside the fried eggplant and potatoes.

Chop the onions and ginger, and mince the garlic.

Make bowl of sauce. Add light soy sauce, salt, sugar, chicken essence, and pepper to the bowl and stir evenly.

Leave a little oil in the pot, add onion and ginger and sauté until fragrant.
